I am trying to learn to use dried beans. I have several recipes that use beans that I and my family enjoy. My problem is in using dried beans as substitute for canned beans. My dried beans turn out mushy when I cook them. How should I be preparing dried beans for use in soups, chili, salads, salsa, and other recipes? Recipes especially like black bean salsa need the beans to be firm, yet cooked through.
