Marinated Chicken One Pot Meal

Ingredients
  

  • 3 large chicken breasts resist the urge to chunk them or vital moisture will be released during the cooking process and the dish can turn out too dry
  • 1 tomato more if you’d like
  • ¼ - ½ cup olive oil
  • 2 tablespoons distilled white vinegar
  • ¼ cup water
  • 2 pinches rosemary
  • 2 pinches basil
  • 2 pinches oregano
  • 2 pinches turmeric
  • 1 pinch thyme
  • 1 teaspoon lemon juice
  • 1 handful shredded cheese

Instructions
 

  • Mix all of the ingredients except the chicken and the cheese together in the skillet or pot.
  • Place the chicken in the skillet or pot, and thoroughly coat both sides of the breasts by flipping them over, and pouring the mixture over them with a spoon.

  • Place the skillet or pot in the refrigerator or as cool of a place as you can find and allow it to marinate for at least 15 minutes.
  • Sprinkle the cheese on top of the chicken breasts.
  • If cooking indoors, bake in the oven (gas, electric, or wood cookstove) at 375 degrees for about 1 hour and 45 minutes. The top of the chicken should be crispy and browned but not burnt. If cooking over an open flame, cover the skillet with aluminum foil. When using a smoker, reduce the heat to 250 at smoke for 2 to 2 and a ½ hours.
