I just love 1-skillet meal recipes. They are keenly handy after a busy day on our survival homestead now, and will become even more beneficial during a SHTF scenario when ingredients will be rationed and additional demands will be placed on your time.
This marinated chicken recipe was created with four key aspects in mind: taste, simplicity, varying heat sources, and healing herbs. I have made this recipe over an open flame, in the smoker, on a wood cookstove, and in our gas oven – all using the same cast iron pot!
It took some experimentation fails to get the flavor combination of herbs and flowers just right with my homemade survival meal concoctions, but this is one is truly delicious and a tribe favorite.
Even small homesteaders can keep chickens in their backyard to keep a readily available source of protein. Growing the herbs and vegetables you need to go with this 1-skillet recipe can also easily be accomplished in a small space.
I cannot give you exact measurements and cooking times for this 1-skillet meal because the both the weight of chicken used and the cooking source can vary widely, as can the herbs, depending upon what you have available.
Instead, I will give you my tried and true ballpark estimates that you can adapt to your own liking as your try out the recipe at home with your own available herbs and choice of cooking source.
Marinated Chicken One Pot Meal
- 3 large chicken breasts resist the urge to chunk them or vital moisture will be released during the cooking process and the dish can turn out too dry
- 1 tomato more if you’d like
- ¼ – ½ cup olive oil
- 2 tablespoons distilled white vinegar
- ¼ cup water
- 2 pinches rosemary
- 2 pinches basil
- 2 pinches oregano
- 2 pinches turmeric
- 1 pinch thyme
- 1 teaspoon lemon juice
- 1 handful shredded cheese
- Mix all of the ingredients except the chicken and the cheese together in the skillet or pot.
- Place the chicken in the skillet or pot, and thoroughly coat both sides of the breasts by flipping them over, and pouring the mixture over them with a spoon.
- Place the skillet or pot in the refrigerator or as cool of a place as you can find and allow it to marinate for at least 15 minutes.
- Sprinkle the cheese on top of the chicken breasts.
- If cooking indoors, bake in the oven (gas, electric, or wood cookstove) at 375 degrees for about 1 hour and 45 minutes. The top of the chicken should be crispy and browned but not burnt. If cooking over an open flame, cover the skillet with aluminum foil. When using a smoker, reduce the heat to 250 at smoke for 2 to 2 and a ½ hours.
